Not-So-Plain Vanilla Cupcake Desserts



Looking for a quick, simple, and cool dessert that gives you many options at a moment’s notice? Simple vanilla cupcakes are one of my favorite after-dinner treats. I bake a batch of cupcakes (box cake mixes work well for this). Once cool, and still in the pan, I top them with piped on vanilla buttercream frosting and place the pan in the freezer. Once frozen, I put the cupcakes in gallon-size freezer bags and return them to the freezer. Since they’re frozen before going in the bags, the frosting design doesn’t get damaged. When you’re ready to serve, thaw for 15 minutes or until soft. The variation of this dessert is only limited by your imagination. So, mix it up and have fun! Here are seven delicious serving ideas to create with the simple vanilla cupcakes.

Chocolate Lover

One scoop chocolate ice cream, mini chocolate chips, chopped chocolate bar, mini peanut butter cups, caramel drizzle, and toasted coconut



Cherry-Vanilla

One scoop vanilla ice cream, sliced fresh sweet cherries, white chocolate chips and chopped almonds


Rocky Road

One scoop Rocky Road ice cream, miniature marshmallows, chopped almonds and caramel drizzle


Pistachio

One scoop pistachio ice cream, whipped cream, and pistachio nuts


Banana Split

One scoop vanilla ice cream, caramel drizzle, strawberry and banana slices, Maraschino cherries, toasted coconut, and chopped pecans


Mint

One scoop mint chocolate chip ice cream, caramel drizzle, chocolate shavings, chopped almonds and a sprig of mint for garnish


Strawberries and Cream

One scoop strawberry ice cream, sliced strawberries, meringue cookies, whipped cream, chopped pecans and chocolate shavings

*P.S. There’s no law that says you can only have one scoop of ice cream!
